Gluten Free Banana Bars

Got a few ripe bananas to use to up?  Have some bananas stashed away in the freezer?  Here's a great gluten free recipe for a little treat!  These can be made dairy free too, with a few substitutions.  We've been eating mostly dairy free around here as it causes one of my kiddos' eczema to flair up.

Banana Bars (with cream cheese frosting)
1/2 c butter, softened (I used coconut oil and didn't quite use 1/2c)
3/4 c sugar (I used a little less, between 1/2 and 2/3c)
2 eggs
1 c sour cream (I used plain almond milk yogurt and put in between 1/2 and 3/4c)
1 tsp vanilla
2 cups flour (I used 1c almond flour and 1c brown rice flour)
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
2-3 well-mashed bananas
(I also added about 1/3c flax meal)

Cream together butter and sugar
Add eggs, sour cream and vanilla
Combine all remaining dry ingredients and gradually add to creamed mixture
Stir in bananas
Spread into greased pan for desired thickness (could use 9x13, 10x15, etc.)
Bake at 350 for 20-25 min, or until toothpick inserted near center comes out clean
Let cool completely if going to frost
(I just sprinkled with a few mini chocolate chips before baking)

Frosting:
1 pkg cream cheese, softened
1/2 c butter, softened
2 tsp vanilla
About 4 c powdered sugar

Beat cream cheese, butter and vanilla in large bowl
Gradually beat in enough powdered sugar to achieve desired consistency
Frost bars and store in the fridge
